"Bright colourful tasty recipe. I like using pearl onions but the recipe is just as tasty using regular chopped onions. If you use vegetable broth this recipe is vegetarian"

Step 1

Heat the oil in a skillet and lightly brown the onions

Step 2

Pour in the broth and cook until the broth is reduced and the onions are still slightly undercooked - 4 minutes.

Step 3

Add butter and mushrooms to the pan, stir fry until the mushrooms are browned.

Step 4

Add peas, Cover and heat through. Season with salt and pepper Serve

We eat vegetables every night just about and I have found so many great and easy ones here. This is a perfect combination and easy to make which I appreciate so much.
