Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Coat 13 x 9-inch baking pan with cooking spray

Step 3

In a large bowl beat the peanut butter with honey, egg, oil and vanilla until blended.

Step 4

In another bowl combine the oats with brown sugar and salt; add to the peanut butter mixture and mix well (the batter will be sticky).

Step 5

Stir in the baking chips.

Step 6

Transfer to baking dish.

Step 7

Bake for 12-15 minutes or until set and edges are lightly browned.

Step 8

Cool on a wire rack, then cut into bars.

Oh my, these are SOOOO good. Mine just came out of the oven 15 minutes ago, and I just couldn't wait to try them so I ate them warm. They are dense and chewy, and just like eating a Kashi bar, only they are homemade which I just love. I put mine in an 8 x 8 pan so they'd be a little thicker, and I used almond butter just to get rid of it. But now, I think I've found a use for almond butter:) Next time I will try it with peanut butter, and I'm certain it will be just as good. Thanks Cal for such a great bar!
