Preheat oven to 375°F. Place 1 teaspoon mounds of grated fresh Parmesan cheese, 4 across and 6 down on two baking sheets. Flatten cheese to create 2-inch rounds on a baking sheet. Bake for 6 to 7 minutes or until golden brown. Makes about 48 cheese crackers for appetizer. Rinse shrimp and dry with paper towel. Chop shrimp into small pieces. Rinse and chop celery and onions. Fold celery and onions into chopped shrimp. Add cocktail sauce, salt and pepper. Spread about 1 teaspoon of cream cheese on each of the Parmesan crisps. Top with shrimp cocktail mixture and serve.

What a discovery! The parmesan crackers are fantastic. One thing be sure to leave them in the oven long enough to be completely brown crisp. I took mine out a minute too soon they were a bit chewy- you want them completely crisp! These parmesan wafers are going to be used for so many things, they are fantastic. Loved the shrimp topping too. A lovely Sunday Appetizer.
