Step by Step Method

Step 1

Heat a non-stick pan over medium heat.

Step 2

Butter the outside of each slice of bread. Spread basil pesto on the inside of each slice of bread. Place the provolaone cheese slices on top of one piece of bread. Top with the other slice of bread. Sprinkle half of the Parmesan cheese on the outside of one side of the sandwich.

Step 3

Place the sandwich, cheese side down, on the hot pan. Grill for 2 minutes or until Parmesan cheese is crusted and golden brown.

Step 4

Sprinkle the rest of the Parmesan cheese on the outside of the other side of the sandwich. Cook until golden brown and the cheese has melted, about 2 more minutes.

Step 5

Serve immediately.

OOPS no pesto but I did have a tomato, basil chutney that I used and I also took a tip from Katie Lee from The Kitchen show and mixed my finely grated parmesan in a little whole-egg mayonnaise and just spread that on the outside of the bread instead of pressing it in and then cooked in the panini press for one great tasting sandwich, thank you Mikekey made for Pick Me tag game.

I made this for a quick easy weekday dinner, I used commercial pesto which of coarse is not as good as homemade however I still enjoyed the sandwich, it was delicious and I can't wait to make it with the real homemade pesto, thank you Mikekey!
