Step by Step Method
Step 1
To make the dough: In a saucepan on medium high heat add 1 quart of water and the potatoes and bring to a boil; cook until tender (10-15 minutes); drain and process through a ricer or food mill. Measure out and reserved 1 1/3 cups potatoes, discarding all remaining potatoes.
Step 2
Preheat oven to 200 degrees F. Once the oven temp reaches 200 degrees, maintain heat for 10 minutes and then turn off oven.
Step 3
In a food processor pulse 1/2 cup flour, 1/2 cup warm water and yeast until combined. Let mixture rest for 20 minutes or until bubbly.
Step 4
Add 2 tablespoons oil, salt, potatoes and 3 cups flour and 1/2 cup warm water to flour mixture and process until dough forms a ball (under 1 minute); transfer dough to lightly oiled bowl; turn to coat and then cover with plastic wrap. Place bowl in warm oven until dough is soft and spongy (30-35 minutes) and has doubled in size.
Step 5
Add 1/4 cup oil to 14 inch pizza pan, swirling to coat.
Step 6
Remove dough from oven and transfer to counter and press into a 12 inch round; transfer round to pan; cover with plastic and let rest for 10 minutes .
Step 7
One hour before baking set baking stone on lower rack and heat oven to 425 degrees. Uncover dough and push into edges and up sides of pan to form 1 inch high lip; cover with plastic; let rise until doubled (30 minutes).
Step 8
To make the topping: in a bowl combine and tomato and garlic and season with salt and pepper; set aside.
Step 9
Uncover pizza pan and prick surface of dough with a fork. Bake on baking stone for 15 minutes or until dry and lightly browned. Remove from oven.
Step 10
Spread tomato mixture over top and then sprinkle with the mozzarella and parmesan. Return to oven and bake for another 10-15 minutes.
Step 11
Move pan to upper rack and bake for another 5 minutes or until cheese starts to brown.
Step 12
Let pizza cool in pan for 5 minutes.
Step 13
Holding pan at an angle with one hand, use a wide spatula to slide pizza from pan to cutting board. Sprinkle with basil and then cut pizza into wedges to serve.
