"This was out of one of my old cookbooks that was put together by the employees at a company I use to work for back in the 80's...it's out of business but I still enjoy the recipe...it makes a great side dish when you can't think of something else quick and easy to prepare."

Step by Step Method

Step 1

Cook the egg noodles according to package directions.

Step 2

Drain and set aside.

Step 3

Melt butter in 10 inch skillet, over medium high heat, add diced onion and minced garlic, saute lightly until the onion is tender. (if using green pepper add it here).

Step 4

Add noodles and stir to mix in onions.

Step 5

Salt and pepper to taste.

Step 6

Cook on medium heat, stirring occasionally until noodles are crispy around the edges and light brown.

Simple old-fashioned goodness, making it a great way to use egg noodles. Turned into a great side, but can definitely see this as an optimal main meal to serve during the Lenten season that we are in at the moment. To save up my bell peppers, as they were soon to turn, used a whole green pepper and half of a red pepper. Also, added some Italian seasoning. Yummy, Teresa, and thanks for sharing.

As with those old recipes this was as good as it was easy. I used used both green and yellow peppers. Came together for great evening meal.

Loved loved these tasty noodles. Quick and easy to make with excellent results. I used a yellow pepper instead of green and fresh fettuccini (it was what I had on hand). Thanks so much for sharing my friend. Made FYC tag game.

I scaled this back for 1 serve and used just under 2 ounces of dried fettucine noodles and well at the end of devouring this side wished I had cooked more especially considering the noodles only took 6 minutes to cook and this dish could easily be bought together in under 10 to 15 minutes and yes I included the green capsicum/bell pepper and well I all I can do is say thank you TeresaS for posting such a delicious side, made for Alphabet Soup tag game.
