"Two things I love about this recipe. First, this is great to make ahead; portion it up - refrigerate or freeze. Then, it takes no time to reheat and add some toppings for a quick breakfast on the go. Second, great for company. If you have guests coming; make this the night before - and, prepare your toppings. Then, in the am, set out everything; and, you have a 'Self Serve Oatmeal Bar.' Adults and kids love it; and, it's easy too. Prep time includes time to prepare your toppings."

Step by Step Method

Step 1

Oatmeal ... Add the oats, water, milk, butter, and salt to the crockpot; and, mix to combine. Cover and cook on low heat for 6-8 hours. My larger crockpot took 6 1/2-7 hours. Once the oatmeal is done, add the vanilla; and, stir to combine. Also, if it seems a bit dry, you can add a bit more water.

Step 2

This can be made during the day; to make and pack up for your weekday breakfasts - or, make over night for guests the next morning.

Step 3

Toppings ... Obviously, you can set out anything you like. The fresh fruit of course should be prepared right before serving. Otherwise; everything can be prepped ahead of time - which is great for over night guests. I like to set out a full bar with a variety of toppings; then, let everyone help themselves.

Step 4

Serve and ENJOY! ... For a quick breakfast ... simply reheat a bowl in the microwave for a quick easy to go breakfast; and, you can also keep some of the toppings in small ziploc bags or containers in the pantry too. Simply add your favorite toppings; and, it is breakfast on the go.

Step 5

My Favorites: Blueberries or raspberries, brown sugar, nuts, and a little heavy cream. My best friend - maple syrup, walnuts, and dried cherries; and her kids - peanut butter, chocolate chips and bananas, and nutella and apples. So as you can see ... be creative and have fun with it.

Made as written because I needed a recipe just like it. DH & I host a Sat family brunch every 2 wks. I try to offer a variety & 1 of my BIL's faves that I make is shrimp quesadillas. They were on the menu, but I felt I needed another item to add variety so I picked this recipe. It's a perfect way to serve a grp. Uses your crock pot, allows you to offer whatever you have on-hand & lets your guests personalize their own servings. I offered: Maple syrup, half & half cream, a dried cranberry/raisin mix, a seeds/nut mix, brown sugar & crunchy muesli w/chocolate mini-chips. Your recipes continue to keep people happy & well-fed. :-)
