Step by Step Method

Step 1

Grease and flour 9-inch round or 8-inch square pan.

Step 2

In small bowl, combine all cake ingredients.

Step 3

Blend at low speed until moistened; beat 2 minutes at medium speed.

Step 4

Pour batter into greased and floured pan.

Step 5

In small bowl, combine all topping ingredients; blend well.

Step 6

Sprinkle over batter.

Step 7

Cover; refrigerate overnight.

Step 8

Heat oven to 350°F

Step 9

Uncover coffee cake.

Step 10

Bake for 25 to 35 minutes or until toothpick inserted in center comes out clean.

I love recipes that you can make ahead and pop in the oven later. This quick and easy coffee cake is one of those recipes. We loved the flavor, texture and the crunchy topping that forms after baking. I used chopped pecans, and also added a touch of cinnamon and nutmeg to the cake batter, as well as some cinnamon to the topping. Thank you for sharing this wonderful recipe...it is definitely a keeper.

This cake is lovely! As I don't eat sweets in the morning, I made it early in the day and baked it off late afternoon. I used pecans for the nuts. We sure enjoyed this with a dollop of whipped cream. Will surely be made again! Thank you for sharing Teresa! Made for Billboard Recipe Tag.

this worked out well for us -- used brown sugar splenda for the brown sugar and we skipped the nuts in the topping but otherwise made as directed. Thanks for sharing!
