"This is fun to mix, measure, and make. Two boxes of cake mix, a little water, a cup, and a microwave are all you need. Just remember the name of the recipe, and you'll have an individual cake in a little over a minute. (Three parts mix, two parts water, and one minute in the microwave.) A favorite at our house is dark chocolate cake with a spoonful of chocolate chips melted on top, but strawberry and lemon are also wonderful with whipped cream and berries. Note: The boxed mixes together should yield about 22 individual cakes."

Step by Step Method

Step 1

Combine the two boxes of cake mix in a gallon zip top bag and stir to mix them. Store extra mix in the bag for 3 months.

Step 2

In a microwave safe mug or cup, mix 3 tablespoons of cake mix with 2 tablespoons of water. No need to spray/grease the cup. If you do it won't rise properly. Remember, this is part angel food cake.

Step 3

Microwave on high for one minute and let it rest for 10-15 seconds.

Step 4

Eat it plain or top it with whipped cream, fruit, chocolate chips to melt, or room temperature preserves.

I felt like cake and ice cream so I used a 3" wide glass ramekin for this. I used 6 tablespoons of cake mix, 3.5 tablespoons of water and microwaved in my small microwave for 2 minutes. Keep in mind if you do this in a larger microwave with higher than 700 watts, to check after 1 minute. It may not take as long as 2 minutes . with higher voltage. I made 2 layers, so I could frost the cake. I used a knife to run along the edge of the cake and removed it after about 3 minutes, and placed it on a small glass plate. When it was cool, I frosted it (about 10 minutes later). This turned out to be like a mini birthday cake with 2 servings. I had vanilla ice cream with it because I used chocolate cake mix. It was yummy, and now I have 1 more serving to enjoy. I love it and it's so easy!

I used Brownie mix and Angel Food cake and it was yummy. I topped with ice cream, hot fudge, whip cream and nuts and we loved it!

It's been so hot but the kids wanted cake so I made each one of us one of these using chocolate cake and angel food cake. I put strawberries and blueberries mixed with whipped cream in the middle, then poured strawberry sauce over the top and topped with a tad of whipped cream. So yummy and so easy, not to mention I didn't have to heat up the house!

I made up several of these to have for dessert for Easter and now we have them all the time. I change up the cake mixes and add it to the Angel food cake mix and we usually have fresh fruit and whipped cream over them. Sometimes I will frost one and have it with ice cream when the mood strikes too!

I love the simplicity of this and how quick you can have a dessert in your hand when you get a craving for something. I have made it a few times, once with strawberries and whip cream and another time I made one, let it cool, took it out of the dish, tipped it upside down, frosted it and made it for my grandson for his own personal birthday cake. He loved it and so did I!
