"Cooking intensifies the flavour of tomatoes- Something all Italians will know and this recipe brings out all those sweet flavours. I am submitting as written, but may I say I do leave out the salt on the bacon and season the tomatoes first before adding the bacon. I also sprinkle just a touch of sugar on the halved tomatoes. These oven roasted tomatoes are also great served on toast or tossed with spaghetti and parmesan cheese."

Step by Step Method

Step 1

Preheat the oven to 180dg C.

Step 2

Place the tomatoes, bacon seasoned with the salt and pepper on a baking dish lined with non stick paper, and roast for 30-35 minutes or until the tomatoes are tender and the bacon is crispy.

Step 3

Top with the basil leaves and serve.
