"A way to enjoy kabobs (or kebobs) when the grill is out of commission... which is a lot of the year due to weather where I live. We prefer a milder Creole seasoning, so I make a version of it to season the kabobs--but you can use a pre-made, store-bought Creole seasoning to save time if you prefer (or have one on hand). You can also adjust the heat level down by omitting the cayenne or adjust it up by adding cayenne. If you don't use all of the seasoning for the kabobs, store it in an air tight container in your spice cabinet for another purpose. This makes 8 large kabobs for me."

Step by Step Method

Step 1

Preheat oven to 400°F. Line a baking sheet with parchment paper or foil.

Step 2

Mix spices together in an air-tight container or jar. Set aside.

Step 3

Make the kabobs by layering the a kabob sticks with the meat and vegetables: poke through one square of green bell pepper, a slice of red onion, a square of red bell pepper, one cube of chicken thigh, one round of sausage, repeating layers, until the kabob stick is full (leaving about an inch of the kabob stick empty at both ends).

Step 4

Line up the kabobs on the lined baking sheet; spray with non-stick spray. Generously sprinkle the Creole seasoning over the meat and vegetables. Flip the kabobs over and repeat, spraying with non-stick spray and sprinkling Creole seasoning over the meat and vegetables.

Step 5

Bake in the preheated oven for 20 minutes; flip and cook another 15-20 minutes, or until the chicken and sausage are cooked through and the vegetables are tender and browned to your liking.

Very good! I skipped the cayenne and instead of Italian seasoning used dried thyme. I also used less meat than specified and used mild Italian sausages for the sausage. Served with rice and tossed salad for a very complete meal. The seasoning was still quite hot even though I skipped the cayenne -- next time I will try to make it a bit milder -- very good and my husband enjoyed the kabobs. Thanks for sharing!
