Step by Step Method

Step 1

Cook pasta according to package directions, omitting salt and fat.

Step 2

Heat a skillet over medium heat. Add 1 1/2 tablespoon olive oil to the pan. Add finely chopped sun-dried tomatoes, pine nuts, and garlic. Stir and cook for 2 minutes.

Step 3

Stir in the orzo, basil, white balsamic vinegar, pepper, and salt.

Step 4

Enjoy.

Daily Inspiration

This orzo salad is so delicious and it goes great with everything. My sundried tomatoes are more of a paste so it mixed into the orzo very well. I used my own basil from my garden. Served this with some breaded pork chops and a spinach casserole. YUM!

I cut the recipe in half because there's just the two of us...we really enjoyed this...not only is it easy to prepare but it's worthy of serving to company...thanks for posting it...made for "First Time" tag game...under the 24 hour rule...:)

What a great quick dish! I made 2.5 times the recipes for the two of us to eat as an entree (the only things I decreased instead of increased were the salt, pepper and oil). Though not necessary, I bet goat cheese would go nicely with this as well.

I prepared the double amount with 500 g orzo pasta and it was a great success! I used a special basil that I can grow in the house in winter and we all loved the smell and the great taste. I combined this with my ouzo meatballs completed with a red peppers and tomatoes gravy. I'm glad I've prepared a bigger portion as we will enjoy the leftovers very much! Thanks a lot for posting this great recipe.
