Step 1

Preheat oven to 375°F.

Step 2

Spray roasting pan with nonstick cooking spray.

Step 3

Combine soy sauce, apple juice, ginger, garlic and Szechuan peppercorns in small bowl; mix well.

Step 4

Place cod fillets in prepared pan; pour soy sauce mixture over fish.

Step 5

Bake about 10 minutes or until fish is opaque and flakes easily when tested with fork.

Step 6

Transfer fish to serving dish; pour pan juices over fish and sprinkle with green onions.

Very Tasty, Easy recipe. My fillet was a bit thicker so it took 15 minutes. The combuination of flavours is lovely. Will do this recipe again

Made for the What's on the Menu? Game @ FF&F - We eat a lot of seafood in Iceland. I cook for 2 dys at a time & we alternate fish meals w/meat meals. While Siggi is open to creative recipes for salmon & trout, he prefers most other fish to be cooked the Icelandic way - That means boiled fish & potatoes, but I need flavor & variety. Your recipe is 1 of a select few he has "approved" as an exception. I made 1 chg at the end & used chopped leek & snow peas on top instead of green onion (occ hard to find here). I may vary that tomorrow & add baby shrimp. Thx for sharing this tasty recipe w/us.

I scaled the recipe down for 2 and used tilapia instead of cod and it worked perfectly; this was delicious!
