Step by Step Method
Step 1
Rice... Simply cook the rice according to package directions.
Step 2
Once the rice is done; turn the heat off - add the spinach, celery, scallions, orange marmalade, olive oil, vinegar (to taste), salt and pepper; and, mix to combine. Cover and let it set. The heat will warm up all the ingredients; and, wilt the spinach (at least 5 minutes) if needed.
Step 3
Finish, Serve, and ENJOY! ... Right before serving, add the goat cheese, basil, and toss. Reseason, only if necessary. This dish can be served warm, room temp; or, chilled. If you decide to serve it chilled. Add the basil right before serving.
