Step by Step Method

Step 1

Mix and sift flour, baking powder, salt, and baking soda.

Step 2

Stir in the oats.

Step 3

Combine the orange juice, honey, egg, and oil and beat until well blended.

Step 4

Add the grated peel.

Stir just until all dry ingredients are mixed in. Batter will be thin.

Step 6

Fill well-greased muffin pans 2/3 full.

Step 7

Bake at 425' F. about 15 minutes or till golden brown.
