"One Sunday I wanted something special for mine and my SO's dinner,and came up with this recipe.This is just a simple recipe for Roasted Chicken. The prep for this recipe is pretty easy but the roasting will take sometime,so plan ahead.The seasoning that you will need for the recipe is found on this site,#recipe10575. The roasting for the size chicken I used was 2 1/2 hours.If your using a smaller chicken,please adjust the cooking time accordingly. For easier clean up, use a disposable pan lined with aluminum foil.The size pan you use will be determined by the size of your chicken.If you have leftovers, just think of all the wonderful meals you can get out of this. Step 1

Preheat oven to 375 degrees.

Step 2

Line a large roasting pan with aluminum foil and prepare foil with cooking spray.

Step 3

Prepare chicken by removing the bag of giblets,discard or save for making gravy.

Step 4

Rinse chicken well,and pat dry.

Step 5

Rub chicken with oil and generously sprinkle seasonings all over the chicken.

Step 6

Place in prepared roasting pan,and stuff cavity with onion (add more onion if you like).

Step 7

Loosely cover chicken with foil and bake at 375 degrees for 1 1/2 hours,basting occasionally.

Step 8

For the last half hour,remove foil so chicken can brown.

Step 9

Continue to bake until internal temp. reaches 165 degrees,and/or drumstick is easily moved.

I made this as instructed but in a roasting pan and added potatoes. This turned out perfectly. A delicious recipe which will be enjoyed many times.
