Ingredients

The ingredients are:
  • 1 whole (6 pound) chicken (roasting chicken)
  • 1 1/2 cups chopped yellow onion (roughly chopped, I used a large)
  • 1/4 cup oil (olive Oil)
  • Emeril's Essence seasoning (2 teaspoons, I used more)

How to Make

  • Step 1: Preheat oven to 375 degrees.

  • Step 2: Line a large roasting pan with aluminum foil and prepare foil with cooking spray.

  • Step 3: Prepare chicken by removing the bag of giblets,discard or save for making gravy.

  • Step 4: Rinse chicken well,and pat dry.

  • Step 5: Rub chicken with oil and generously sprinkle seasonings all over the chicken.

  • Step 6: Place in prepared roasting pan,and stuff cavity with onion (add more onion if you like).

  • Step 7: Loosely cover chicken with foil and bake at 375 degrees for 1 1/2 hours,basting occasionally.

  • Step 8: For the last half hour,remove foil so chicken can brown.

  • Step 9: Continue to bake until internal temp. reaches 165 degrees,and/or drumstick is easily moved.
