Step 1

Separate onion into rings.

Step 2

Place buttermilk and tabasco in a large glass bowl and mix well and then add onion rings, stir to coat and stand for 10 minutes.

Step 3

Place flour in a large shallow bowl.

Step 4

Pour enough oil into a large heavy-based saucepan to reach a depth of 5cm and heat over high heat (oil is ready when a cube of bread crisps quickly without absorbing any oil).

Step 5

Drain onion and add to flour and toss to coat.

Step 6

Deep-fry onion rings in batches for 3 minutes or until golden and drain on kitchen paper towel.

Step 7

Reheat oil between batches and serve onion rings with Lemon and Dill Mayonnaise.

FOR THE LEMON AND DILL MAYONNAISE


Step 8

Whisk yoghurt and mayonnaise in a bowl and add onion, dill, zest, juice and garlic and mix well and season to taste.
