Ingredients

The ingredients are:
  • FOR ONIONS RINGS
  • 2 large yellow onions (cut into 5mm thick rings)
  • 2 cups buttermilk
  • 1 tablespoon hot sauce (red tabasco sauce)
  • 2 cups all-purpose flour (plain)
  • Vegetable oil, to deep-fry
  • FOR LEMON AND DILL MAYONNAISE
  • 1/3 cup yogurt (Greek-style natural yogurt)
  • 1/3 cup mayonnaise
  • 1 green onion, finely chopped
  • 1 tablespoon finely chopped dill
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

How to Make

  • Step 1: Separate onion into rings.

  • Step 2: Place buttermilk and tabasco in a large glass bowl and mix well and then add onion rings, stir to coat and stand for 10 minutes.

  • Step 3: Place flour in a large shallow bowl.

  • Step 4: Pour enough oil into a large heavy-based saucepan to reach a depth of 5cm and heat over high heat (oil is ready when a cube of bread crisps quickly without absorbing any oil).

  • Step 5: Drain onion and add to flour and toss to coat.

  • Step 6: Deep-fry onion rings in batches for 3 minutes or until golden and drain on kitchen paper towel.

  • Step 7: Reheat oil between batches and serve onion rings with Lemon and Dill Mayonnaise.

  • FOR THE LEMON AND DILL MAYONNAISE

  • Step 8: Whisk yoghurt and mayonnaise in a bowl and add onion, dill, zest, juice and garlic and mix well and season to taste.
