Step 1: Separate onion into rings.
Step 2: Place buttermilk and tabasco in a large glass bowl and mix well and then add onion rings, stir to coat and stand for 10 minutes.
Step 3: Place flour in a large shallow bowl.
Step 4: Pour enough oil into a large heavy-based saucepan to reach a depth of 5cm and heat over high heat (oil is ready when a cube of bread crisps quickly without absorbing any oil).
Step 5: Drain onion and add to flour and toss to coat.
Step 6: Deep-fry onion rings in batches for 3 minutes or until golden and drain on kitchen paper towel.
Step 7: Reheat oil between batches and serve onion rings with Lemon and Dill Mayonnaise.
Step 8: Whisk yoghurt and mayonnaise in a bowl and add onion, dill, zest, juice and garlic and mix well and season to taste.
