Step by Step Method

Step 1

Place all ingredients in a large bowl,mixing well to assure spices are evenly distributed.

Step 2

Form into patties, refrigerate several hours or overnight to allow spices to blend.

Step 3

In large pan over medium heat fry until well browned and cooked through, with no pink showing.

Step 4

This mixture may be stuffed into small casings, making 3-4 inch links, your guests will be ever so impressed!

mmm Gerry!! wonderful flavour, the seasonings are perfect and we all loved the sausage. I baked mine on a rack in the oven, turned out a beautiful golden brown, served them with a lemon/mushroom sauce and we had them for supper with an unexpected guest who wanted to take the one left over with him in a bun to eat on the road as he drove back to his Vancouver island home!! I would certainly make these again, I had intended making the whole recipe, having them for the two of us with eggs and freezing the rest, so i will have to make another batch for the freezer!! Our guest took the leftovers!! We all loved them!!

These had good flavor but the texture was to bready! Next time I will leave out the bread crumbs. Bread was added to ground meats to extend the meat during hard times, in my opinion this recipe does not need it. The meat and spices would stand alone.

Big brunch for the holiday this year at my house and I made up a double recipe of these to feed the crowd. They really picked up the flavor of the spices and we loved these with homefries, eggs and toast to start off the day. Great sausage!
