Step by Step Method

Step 1

Mix oatmeal, flour, baking powder, baking soda, cinnamon and sugar in a large bowl.

Step 2

In small bowl mix egg, oil, vanilla and mashed banana.

Step 3

Stir into dry ingredients.

Step 4

Spoon into 12 muffin pans, greased or lined with paper.

Step 5

Sprinkle topping over the batter.

Step 6

Bake at 375° F for 20 minutes.
