"found this in out of print taste of home cookie book. the batter is soo good and when you don't overcook so are the cookies. to make regular take out flour blend and xanthan gum and add 1 cup all-purpose flour. if your gluten free flour blend has xanthan gum do not add additional.mix xanthan gum in with shortening."
In a mixing bowl, cream shortening, sugars and xanthan gum.
Beat in egg, water and vanilla
Combine flour, baking soda and salt; gradually add to the creamed mixture.
Stir in remaining ingredients.
Drop by tablespoonfuls onto ungreased baking sheets.
Bake 375 for 10-12 minutes or lightly browned.
Cool for few minutes before removing to wire racks. Yield 4 1/2 dozen
