"found this in out of print taste of home cookie book. the batter is soo good and when you don't overcook so are the cookies. to make regular take out flour blend and xanthan gum and add 1 cup all-purpose flour. if your gluten free flour blend has xanthan gum do not add additional.mix xanthan gum in with shortening."

Step by Step Method

Step 1

In a mixing bowl, cream shortening, sugars and xanthan gum.

Step 2

Beat in egg, water and vanilla

Step 3

Combine flour, baking soda and salt; gradually add to the creamed mixture.

Step 4

Stir in remaining ingredients.

Step 5

Drop by tablespoonfuls onto ungreased baking sheets.

Step 6

Bake 375 for 10-12 minutes or lightly browned.

Step 7

Cool for few minutes before removing to wire racks. Yield 4 1/2 dozen

Great ingredients in these wonderful cookies. They turned out awesomely crispy, which I love. Did need to make adjustments to oven temp and minutes. Lowered the oven temp to 350F for an 8-10 minute bake (for my oven). Saved this recipe to also make gluten free. Thank you Muffinlady for sharing this keeper!
