"Is there anything better than fresh tomatoes in season? Even hot house tomatoes would be good in this creative BLT sandwich variation. Recipe source is the Florida Tomato Committee & I admit I amended the original recipe slightly. Enjoy!"

Step by Step Method

Step 1

Preheat oven to 400°F.

Step 2

Use tomatoes held at room temp until fully ripe. Quarter tomatoes & remove the seedy moist centers so only the pulp of the tomato is used. Coarsely chop tomato pulp, place in a large bowl & set aside.

Step 3

Slice off the top of each hard roll & remove the center for a later use. Brush inside of rolls (top & bottom) w/2 tbsp of the creamy dressing. Bake till lightly toasted (about 5 min) & set aside.

Step 4

Add the lettuce, bacon, green onions & feta cheese to the bowl w/the tomatoes & toss until well-mixed.

Step 5

Spoon BLT mix into toasted bread shells. Place tops of rolls over the filling & serve immediately.

NOTE: If you want to do the prep ahead, but serve later - Delay the final step until just prior to serving (Sliced avocado is a good add to this sandwich)

Great spin on a BLT - like a BLT salad in a sandwich. DH asked me to use less dressing and more feta. We love the feta in it. We like this best with the ingredients as written, but in a pinch I have made this with other cheeses and/or greens, and it is still super good. The Caesar dressing really makes it special.
