"I found this recipe on a Caribbean website, and yes, there are a lot of ingredients in this dish but so worth the effort. Marinating the meat for as long as you can is key for that authentic island taste. This dish actually got rave 5 star reviews so I do hope you will try "

Step by Step Method

Step 1

In a large bowl, combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar

Step 2

With a wire whisk, slowly add the olive oil, soy sauce, vinegar, orange juice, and lime juice.

Step 3

Add the pepper, onion, and green onions mixing well.

Step 4

Add the chicken breasts, cover and marinate for at least 1 hour, preferably overnight if possible.

Step 5

Preheat an outdoor grill. Remove the breasts from the marinade and grill for 6 to 10 minutes on each side or until fully cooked. While grilling, baste with the marinade.

I have to agree,the recipe is so worth the gathering of the ingredients. Makes for awesomely flavoured chicken. Made half the recipe for the two of us using the full amount of liquid with halved spices. Other than cutting back on the cinnamon which I am slowly incorporating into our main dishes went with all the spices as posted. Being a touch too chilly to grill outdoors here in January I used my oven, resulting in wonderfully spiced chicken that saw to an empty platter. Going to try this with chicken pieces!
