Step by Step Method

Step 1

Slice cucumber as thinly as possible with a mandolin or food processor & place in a bowl.

Step 2

Slice green onions as thinly as possible on the diagonal & add to the cucumbers.

Step 3

Add red onion.

Step 4

Marinade: Mix vinegar, sugar, dill weed, salt & pepper in a small bowl.

Step 5

Whisk until thoroughly blended.

Step 6

Pour over cucumbers & onions, turn with a spatula to coat all pieces.

Step 7

Marinate 2 hours or more.

Step 8

To serve, lift cucumbers & onions out of the marinade & serve on lettuce leaves with tomato wedges as garnish

Step 9

Save marinade to use again.
