Step 1: Slice cucumber as thinly as possible with a mandolin or food processor & place in a bowl.
Step 2: Slice green onions as thinly as possible on the diagonal & add to the cucumbers.
Step 3: Add red onion.
Step 4: Marinade: Mix vinegar, sugar, dill weed, salt & pepper in a small bowl.
Step 5: Whisk until thoroughly blended.
Step 6: Pour over cucumbers & onions, turn with a spatula to coat all pieces.
Step 7: Marinate 2 hours or more.
Step 8: To serve, lift cucumbers & onions out of the marinade & serve on lettuce leaves with tomato wedges as garnish
Step 9: Save marinade to use again.
