Step by Step Method

Step 1

In a small bowl, combine seasoned breadcrumbs, parsley, melted butter, garlic & thyme. Set crumb mixture aside.

Step 2

In a wide, shallow bowl combine flour, coriander, salt & pepper.

Step 3

Evenly coat both sides of each chop w/mustard & then coat w/flour mixture (I suggest a pastry brush for this).

Step 4

Heat oil in skillet over med-hi heat. Brown chops well on each side & place in a shallow baking dish.

Step 5

Cut Brie in half & then cut again horizontally to form thin half-circles & place 1 on each chop. Spoon crumb mixture on top of cheese-covered chops.

Step 6

Bake (uncovered) in a 400F oven for 20 min or until breadcrumbs are golden & chops just done. Serve immediately.

Nice change from regular fried chops. Temperature and baking time were spot on. I did have to sub in a different cheese, as I didn't realize I was out of brie. :(
