Step by Step Method

Step 1

Heat olive oil in a saucepan. Add onion and garlic, cook until softened (do not burn!).

Step 2

Stir in the tomato paste, and continue to mix so that it blends well with the other ingredients.

Step 3

Add curry and cinnamon and the mushrooms, and allow the mushrooms to soften, and for their juices to slightly reduce (around 10 minutes).

Step 4

Mix in the cooked orzo, stir over low heat until heated through.

Step 5

Garnish with parsley, and a squeeze of fresh lemon. Serve.
