Ingredients

The ingredients are:
  • 5 ounces dry orzo (cook it according to the packet instructions, but DON’T overcook it so don’t leave it unattended – drained, rinsed with cold water, and set aside)
  • 2 tablespoons oil (olive oil)
  • 6 medium garlic cloves, finely chopped
  • 1 medium yellow onion, very finely chopped
  • 2 tablespoons tomato paste
  • 1/2 teaspoon curry powder
  • 1/8 teaspoon ground cinnamon (no more)
  • 10 fresh mushrooms, chopped into small pieces
  • Salt and pepper, to taste
  • Flat leaf parsley, chopped, for garnishing
  • Lemon wedges (optional)

How to Make

  • Step 1: Heat olive oil in a saucepan. Add onion and garlic, cook until softened (do not burn!).

  • Step 2: Stir in the tomato paste, and continue to mix so that it blends well with the other ingredients.

  • Step 3: Add curry and cinnamon and the mushrooms, and allow the mushrooms to soften, and for their juices to slightly reduce (around 10 minutes).

  • Step 4: Mix in the cooked orzo, stir over low heat until heated through.

  • Step 5: Garnish with parsley, and a squeeze of fresh lemon. Serve.
