Step 1

Heat the butter in a large saute pan

Step 2

Add the chopped onions, crushed garlic, achiote, pepper and salt to make a refrito,

Step 3

Cook until the onions are soft, about 5 minutes.

Step 4

Add the hominy(mote)

Step 5

Stir in well and cook for another 2 minutes.

Step 6

Add the milk and cook until the milk is almost all absorbed by the hominy.

Step 7

Whisk the eggs and add them to the hominy, stir well and cook for about 3 minutes.

Step 8

Stir in the green onions (scallions), parsley and cilantro

Step 9

Season to taste

Ten stars! Oh my, how can such a humble dish be so good? Followed the instructions to the letter, and this made a fantastic breakfast. I love hominy anyway, but just the combo of ingredients was the best! Make sure to use white hominy, because the other would turn our rather tough! Thanks for sharing!
