Ingredients

The ingredients are:
  • 1 can (15 ounces ) hominy, drained
  • 2 tablespoons butter
  • 8 eggs, beaten
  • 1 cup white onion,diced
  • 1 garlic clove, crushed
  • ¼ teaspoon ground achiote
  • ¼ cup milk
  • 2 scallions, minced
  • 1 teaspoon cilantro, minced
  • 1 teaspoon parsley, minced
  • 1/4 teaspoon salt ,to taste
  • 1/8 teaspoon white pepper

How to Make

  • Step 1: Heat the butter in a large saute pan

  • Step 2: Add the chopped onions, crushed garlic, achiote, pepper and salt to make a refrito,

  • Step 3: Cook until the onions are soft, about 5 minutes.

  • Step 4: Add the hominy(mote)

  • Step 5: Stir in well and cook for another 2 minutes.

  • Step 6: Add the milk and cook until the milk is almost all absorbed by the hominy.

  • Step 7: Whisk the eggs and add them to the hominy, stir well and cook for about 3 minutes.

  • Step 8: Stir in the green onions (scallions), parsley and cilantro

  • Step 9: Season to taste
