Step 1: Heat the butter in a large saute pan
Step 2: Add the chopped onions, crushed garlic, achiote, pepper and salt to make a refrito,
Step 3: Cook until the onions are soft, about 5 minutes.
Step 4: Add the hominy(mote)
Step 5: Stir in well and cook for another 2 minutes.
Step 6: Add the milk and cook until the milk is almost all absorbed by the hominy.
Step 7: Whisk the eggs and add them to the hominy, stir well and cook for about 3 minutes.
Step 8: Stir in the green onions (scallions), parsley and cilantro
Step 9: Season to taste
