Step by Step Method

Step 1

Combine vinegar, honey, oil, garlic, cumin, paprika, cayenne, salt and cinnamon in a small bowl.

Step 2

Rinse chicken; pat dry with paper towels. Cut each chicken breast into 4 lengthwise strips. Thread chicken, accordion-style, on eight 8-inches skewers. (If using wooden skewers, soak in water for 30 minutes).

Step 3

Place in a 3-quart rectangular baking dish. Pour marinade over chicken. Cover and refrigerate for 2 to 4 hours, turning skewers occasionally. Remove chicken from marinade; reserve marinade.

Step 4

Grill skewers on the rack of an uncovered grill over medium-hot coals for 8 to 10 minutes, or till chicken is tender and no longer pink, turning and brushing with reserved marinade halfway through grilling time. Or, place skewers on the unheated rack of a broiler pan. Broil skewers 4 inches from heat for 5 minutes. Turn and brush with reserved marinade; broil 3 to 5 minutes more or until chicken is tender and no longer pink.

Step 5

Or, preheat gas grill. Adjust heat for direct cooking. Place skewers on grill rack directly over medium-hot heat. Grill uncovered as directed.

I made these on the grill over direct medium-high heat for a few minutes then I placed them over indirect heat because they were getting black. They turned out so tasty. We loved the sweet and spicy in this recipe. This will be made again and again, thx for sharing this recipe here.

I cut the recipe back to just two brochettes (1 medium chicken breast). Lovely blend of flavours. Just a bit exotic. The chicken was moist and loaded with flavour. I cooked them in a non stick pan medium heat -perfect.

Delicious! I cut recipe in half and since it is winter, I did the broiler method. Looking forward to doing this during grilling season. I will double the marinade next time and reserve half for dipping sauce.

Very good chicken - used only two breasts, but they were huge. Cooked the skewers on a gas grill a little longer than suggested as my chicken was also very thick. Thanks for sharing!
