Step 1

In a casserole dish, place chicken in

Place the sweet potatoes around

Meanwhile, in a microwave safe measuring cup, combine the butter, honey, rose water, salt cinnamon and pepper. Heat in the microwave until butter has melted, about 30 seconds.

Step 4

Go to chicken in a baking dish and pour the butter mixture over it.

Step 5

Stir to coat the chicken completely

Step 6

Put onion on top of chicken then cover

Place the dish of chicken into the oven.

Bake at 425 degrees for 25 minutes

Uncover, place sliced peaches in and reduce heat to 350 and bake 25 more minutes until chicken is browned and juices run clear

Last 5 minutes add almonds

This was super fabulous, and it was so easy to prepare, too. The cinnamon adds a wonderful depth of flavor and exotic tone to the dish. But the sliced peaches (and I used fresh peaches, sliced thinly) helped to keep the chicken and sweet potatoes moist during roasting, not to mention what a nice flavor they added to the dish.
