"This was my Mom's way with meatloaf, we loved it as kids, especially cold on a picnic with potato salad and all the trimmings. She never used a pan, said she didn't like her meatloaf sitting in it's greese; she always shaped it into a loaf and roasted it on a cookie tray; it was always crunchy on the outside and juicey soft on the inside; fell apart when served hot but was sliced beautifully when served cold the next day (my favourite way to eat it! makes me want some of her great potato salad too; mmm summer picnic memories)"

Step by Step Method

Step 1

Preheat oven to 350f degrees. In a large bowl combine all ingredients except chilli sauce and cooking spray; Mix well.

Step 2

Line a cookie tray with foil and spray with veggie cooking spary. Dump the meat mixture onto the cookie tray and shape into a loaf. Using a small spoon or knife, run a fairly deep groove down the centre top of the loaf; fill the groove with the chilli sauce.

Step 3

Roast in preheated oven on the centre rack for 65 to 75 minutes; remove to a warm platter and let sit for 10 minutes before slicing. Serve hot or refridgerate and serve sliced cold with potato salad or in sanwiches.
