  • For the bolillos, look for a fresh variety with a slightly crisp crust and soft interior.
  • For the refried beans, use your favorite brand or make your own.

  • For the bolillos, try using ciabatta bread instead. The ciabatta is slightly denser and chewier than the bolillos, which will help to keep the sandwich together and make it easier to eat.
  • For the monterey jack cheese, try using mozzarella instead. The mozzarella has a milder flavor, which will help to balance out the spicy salsa, and it will also melt more easily than the monterey jack.

Chorizo and Avocado Molletes Replace the refried beans with 4 ounces of cooked chorizo, and add 1/2 cup of chopped avocado to the salsa ingredients. Top the sandwiches with the salsa and serve.

Mexican Street Corn: Mexican Street Corn is a delicious side dish to pair with Molletes Mexican Grilled Cheese. It is a flavorful combination of grilled corn, mayonnaise, and Cotija cheese, all topped off with a sprinkle of chili powder. The creamy mayonnaise and salty Cotija cheese provide the perfect contrast to the crunchy grilled corn, making it the perfect accompaniment to the cheesy Molletes.

Chunky Guacamole: Chunky Guacamole is the perfect accompaniment to Molletes Mexican Grilled Cheese. The creamy texture of the guacamole pairs well with the crunchy grilled cheese and the flavors of the guacamole add an extra layer of flavor to the dish. The combination of the creamy guacamole, the crunchy grilled cheese, and the flavorful Mexican Street Corn will create a delicious and memorable meal.

I served these open-faced (only re-reading the recipe directions did I realize they were probably meant to have both halves of the roll) and omitted the avocado and cilantro... I had a bunch of kids here and I avoided the green stuff because I didn't know who was picky. These were a great mid-afternoon, post bike-riding snack for the boys. Like bready tostadas! VERY easy to put together and VERY filling!
