"This is a somewhat dense and moist cake with a yummy gooey topping. I always increase the topping ingredients half again..so there is lots of it with every bite! Just know that the batter will be on the thin side before you put it in the pan."

Step by Step Method

Step 1

Preheat oven to 350 degrees; pour boiling water over quick oats and let stand until almost cool.

Step 2

Cream together shortening, sugars, eggs, cinnamon, salt and vanilla.

Step 3

Add cooled oatmeal, flour and baking soda dissolved in the warm water.

Step 4

Mix well; batter will be thin.

Step 5

Spray a 9 x 13 pan.

Step 6

Pour batter into prepared pan and bake for 30 - 40 minutes.

Step 7

Topping: Have ready for when cake comes out of the oven.

Step 8

Combine all topping ingredients in saucepan.

Step 9

Bring all ingredients to a gentle boil and cook until thickened; about 3-5 minutes.

Step 10

Remove from heat and spread over hot cake as it comes out of the oven.

See I missed reviewing this delicious cake. So easy and so good. Made as posted, other than after pouring on the topping I put it back in the oven til coconut lightly browned. I look forward to serving this come cake and coffee time which I hope is sooner than later. Into my recipe drawer for this one!
