"Modified recipe from the kitchn blog, originally published January 2010. Oatmeal can be made ahead, dished without the nut/chocolate topping, covered with plastic wrap and refrigerated until needed. On busy mornings, microwave the oatmeal (without nut/chocolate topping) until hot, top with milk and some of the nut/chocolate topping, to serve."

Step by Step Method
Step 1
Bring water to a boil. Stir in oats, cocoa powder, coffee granules, and salt. Bring back to a boil and reduce heat to low. Simmer uncovered for 20 to 30 minutes, stirring frequently, until the oats reach your desired tenderness.
Step 2
Remove from the heat and stir in the sweetener.
Step 3
While the oatmeal cooks, roughly chop the mixed nuts and chocolate chips. Set aside in a small serving bowl.
Step 4
When the oatmeal is ready, serve hot with milk or cream on the side, and sprinkle with the nut and chocolate mixture.
NOTE: Oatmeal can be made ahead, put into serving bowls without the nut/chocolate topping, covered with plastic wrap and refrigerated until needed. Then warmed in the microwave until hot and topped with milk and some of the nut/chocolate topping to serve
