Step by Step Method

Step 1

In a small microwave safe bowl, add the sour cream, cheese, salt and pepper to the beaten eggs.

Step 2

Mix well.

Step 3

Place bowl in microwave (you don't have to cover) and cook for about a minute or so.

Step 4

Stir eggs, and heat for another 30-45 seconds.

Step 5

Stir again and repeat process until cooked to consistency you prefer.

Step 6

Should not take more than 3 minutes.

I have made this twice! I've made scrambled eggs just in a coffee mug, but never added sour cream. Just milk and cheese and sometimes bacon. The sour cream adds a nice creaminess. Thanks for sharing!!
