Step by Step Method

Step 1

In a medium saucepan, bring the cocoa, sugar, cinnamon, coffee granules, milk and butter to a boil over medium heat.

Step 2

Bring to a rolling boil and allow to boil for 1 minute.

Step 3

Pull the saucepan off the heat after boiling. Add in the oats, peanut butter and vanilla. Mix well.

Step 4

Allow the mixture to cool for 1 minute and then drop by teaspoonfuls onto wax paper. Allow to cool until hardened.

Step 5

Do not refrigerate. Just pack away in an air-tight container.

Very good! It doesn't take long at all for them to cool after dividing them out. The peanut butter is good in these. The caffeine is an added bonus.

Really liked these cookies. I shared them with my friend Beth. She said they were literally perfect, and the cinnamon added a little something but not overwhelming and perfectly compliments the chocolate. I am going to make these again.
