Step by Step Method

Step 1

In a bowl, combine apricots, apple, cranberries and wine. Set aside, stirring occasionally, unit fruit softens and most of liquid is absorbed, about 2 hours.

Step 2

Preheat oven to 350°F. cut brie in half horizontally. Set bottom, cut side up, in shallow ovenproof baking dish or soup bowl, ideally about 1 1/2 in-deep and 6 inches wide. Stir pecans into fruit mixture, spoon 1/2 cup onto brie, and set other half of cheese on top...Spoon remaining fruit mixture over top, leaving border uncovered. Bake until cheese just melts at edges, 10 to 12 minutes. Serve with baguettes slices.

Great appetizer for when entertaining, but also perfect for a movie night. Soaking the fruits in wine gave it that extra oomph and I can see port working well here too. I didn't have muscato, but used part marsala and part white. It melted well, though I accidentaly baked it a bit longer, but it assured the cheese was scrumptiously melty. Thank you Teresa for sharing!
