"We have all heard about salad stuffed pasta shells - which are great! Well, this is a little twist on the classic recipe. Perfect for a potluck, entertaining, game day or night; or just a fun Sunday salad with family. There are a few ingredients, but nothing difficult. I love the Mediterranean flavors in this - and, just think "Chopped;" because, that is what you are making - everything needs to be small diced. Now, the amounts listed, are what I use; but, this is a salad ... so, add what you like. This makes approximately 16 stuffed shells, or 4-5 cups of salad. Note: The shells are best made ahead, then cooled before stuffing. This is perfect for a potluck, and travels well."

Step by Step Method

Step 1

Shells ... Cook the pasta shells according to package directions in a large pot of plenty of salted water. Remove from the heat, drain, rinse with cold water; and, let them cool on a sheet tray. You want them al dente, firm; but, cooked through.

Step 2

Dressing ... Use any recipe you like. There are many great recipes for Greek Salad Dressings here on RecipeZazz; but, use your favorite recipe. There are also quite a few 'store brands' which are very good.

Step 3

Salad ... In a large bowl, add all the tomatoes, artichokes, cucumber, onion, and olives, and mix well. Add the romaine and spinach and toss to combine. The last thing you want to add is the Feta and dressing; and, lightly toss. Just enough to combine all the ingredients.

Step 4

Shells ... Using a tablespoon, stuff the shells - and make sure to really fill them. Simply cover with plastic and chill for 1-2 hours. They can be made 6-8 hours in advance; but, keep them covered well. You do not want the pasta to dry out.

Step 5

Serve ... Serve the shells on a platter, with a little extra dressing in the middle of the platter. Sprinkle with parmesan, parsley, and basil. ENJOY!
