"A nicely spiced lamb based combination to wrap in a lettuce leaf and enjoy before a meal or with a cocktail. I just had 5 ounces of ground lamb in the freezer, had a surplus of lettuce from the garden and the rest is history! Make it ahead of time if you wish and just reheat befor serving."

Step by Step Method
Step 1
Heat oil in a non stick skillet, medium heat, add lamb.
Step 2
Break up any lumps, cook until lightly browned about 5 minutes.
Step 3
Add minced onions, garlic and mushroom, stir, cook for about 7 minutes or until the mixture is cooked through
Step 4
While the meat mixture is cooking measure out all the remaining ingredients except lettuce leaves and mint jelly. Mix together
Step 5
Add to meat mixture in fry pan, continue cooking for about 4 minutes stirring frequently. The Pine nuts should be golden.
Step 6
Have the lettuce leaves ready and the mint jelly in a dish on the table.
Step 7
Place the hot fry pan on the table and let everyone make their own wrap.
Step 8
A couple of tablespoons of meat mixture and a teaspoon of mint jelly on each lettuce leaf.
Step 9
Enjoy
