Wow - 10 stars for this one! The flavor was absolutely amazing, and what an easy dish to put together! Ingredient-wise, I wouldn't change a thing. But next time I would reduce the time the potatoes cook to 10 minutes, and increase the time the peppers and tomatoes cook to 20 minutes. The tomatoes were done, but not "exploded" quite to the degree I like my cherry tomatoes roasted. Waiting for the tomatoes to look done led me to leave the chops in the oven for a bit too long and they didn't come out rare. But that's an easy fix! I used a Berghoff enameled cast iron pan, which was perfect for this dish. We'll definitely be making this again. Oh, and don't forget to fish out the lemon wedges before serving... DH mistook one for a yellow pepper - Surprise! LOL.
