Step by Step Method

Step 1

First make the dill Greek yogurt sauce. Combine the minced garlic, fresh dill, yogurt, olive oil, lemon juice and cayenne pepper in a food processor. Run the food processor until all the ingredients are well blended and a smooth thick sauce or dip develops. Test and add salt if needed. Transfer to a small bowl or container, cover and refrigerate for at least one hour or until ready to use.

Step 2

In a small bowl, mix together the minced garlic, spices and 3 tbsp olive oil. Pat the chicken thighs dry and rub each with the garlic-spice mixture.

Step 3

Place the spiced chicken thighs in a large tray on a bed of sliced red onions with lemon juice and the remaining 2 tbsp olive oil. Cover and refrigerate for 2-4 hours or overnight.

Step 4

When ready, heat a gas grill to medium-high. Place the chicken thighs on the grill. Cover for 5-6 minutes, then turn the chicken over and grill for another 5-6 minutes covered.

Step 5

Serve with a side of the dill Greek yogurt dip you prepared earlier!

This is an Excellent flavored chicken. The spice combination is spot on and I marinated it for 2 days due to change in dinner plans. I believe this longer sitting time added even more depth. I used skinless, boneless chicken breasts and found it to work perfectly. Because I already had dill sauce made for another dish, I used that to serve with this dish, but next time, and there will be a next time before the summer ends, I want to give the dill sauce a try. What great flavor these chicken thighs have! A very unique combination of spices. I grilled my thighs with the skin on, but rubbed the seasoning under the skin. Thanks for sharing! Made for FYC tag game.

Daily Inspiration

This is a wonderfully flavored chicken dish and it is easy to make. Used boneless,skinless chicken thighs as directed and they were moist and delicious. Served with a Middle Eastern chickpea salad. Nancy : )

Great marinade, great sauce, great chicken! I was on the last of my garlic which had me only using five cloves - still nice and garlicy!The Greek yogurt dip was perfect for our tastes! Can't wait to make this for my summer garden grills.

Wow, this is delicious! I used boneless,skinless chicken breasts and marinated them overnight. I grilled the chicken and the onions together. The combination of the flavorful chicken, grilled red onions and the yogurt sauce is fabulous. I'm tucking this into my Best of 2015 file.
