Preheat oven to 400 degrees F.
In a food processor blend chop the onion and garlic until finely chopped. Transfer to a large bowl and add the beef and 1/4 cup ketchup and the next three ingredients (eggs - pepper).
In the food processor add the bread; using on/off turns blend until the bread is chopped. Transfer to the bowl. Stir in parsley.
Transfer mixture to a loaf pan (9x5x2 inch). Arrange bacon slices on top of meat loaf mixture, spacing apart and tucking edges down into the meatloaf. Spoon remaining ketchup between bacon slices.
Bake the meatloaf for about 1 hour or until the meatloaf is cooked through. Let rest for 10-15 minutes.
Slice spatula under one end of meatloaf; tilt pan; and slice loaf onto the platter. (I usually use two spatulas).
