Step 1: Preheat oven to 400 degrees F.
Step 2: In a food processor blend chop the onion and garlic until finely chopped. Transfer to a large bowl and add the beef and 1/4 cup ketchup and the next three ingredients (eggs - pepper).
Step 3: In the food processor add the bread; using on/off turns blend until the bread is chopped. Transfer to the bowl. Stir in parsley.
Step 4: Transfer mixture to a loaf pan (9x5x2 inch). Arrange bacon slices on top of meat loaf mixture, spacing apart and tucking edges down into the meatloaf. Spoon remaining ketchup between bacon slices.
Step 5: Bake the meatloaf for about 1 hour or until the meatloaf is cooked through. Let rest for 10-15 minutes.
Step 6: Slice spatula under one end of meatloaf; tilt pan; and slice loaf onto the platter. (I usually use two spatulas).
