Ingredients

The ingredients are:
  • 1 red onion (diced)
  • 3 garlic cloves, peeled
  • 1 1/4 pounds ground beef
  • 1/2 cup ketchup (divided)
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 7 bacon slices (thick-sliced, 5 slices coarsely chopped and 2 sliced cross-wise)
  • 4 slices bread (torn into pieces)
  • 3 tablespoons fresh chopped parsley

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: In a food processor blend chop the onion and garlic until finely chopped. Transfer to a large bowl and add the beef and 1/4 cup ketchup and the next three ingredients (eggs - pepper).

  • Step 3: In the food processor add the bread; using on/off turns blend until the bread is chopped. Transfer to the bowl. Stir in parsley.

  • Step 4: Transfer mixture to a loaf pan (9x5x2 inch). Arrange bacon slices on top of meat loaf mixture, spacing apart and tucking edges down into the meatloaf. Spoon remaining ketchup between bacon slices.

  • Step 5: Bake the meatloaf for about 1 hour or until the meatloaf is cooked through. Let rest for 10-15 minutes.

  • Step 6: Slice spatula under one end of meatloaf; tilt pan; and slice loaf onto the platter. (I usually use two spatulas).
