Step by Step Method

Step 1

Preheat oven to 375F. Coat large 6-cup muffin tin with cooking spray.

Step 2

In a large bowl combine dry ingredients.

Step 3

In a separate bowl, combine remaining ingredients (except icing ingredients).

Step 4

Pour into dry ingredients and mix just until all ingredients are moist.

Step 5

Spoon batter in muffin tin, filling to rims. Bake 20-30 minutes, until light brown, and a cake tester inserted into center comes out clean.

Step 6

Cool in pan 10 minutes before removing to wire rack to cool completely.

PREPARE ICING


Step 7

Combine all ingredients in a small bowl and beat on medium speed with electric mixture until creamy and smooth. Frost top of each cooled muffin.
