Step 1: Preheat oven to 375F. Coat large 6-cup muffin tin with cooking spray.
Step 2: In a large bowl combine dry ingredients.
Step 3: In a separate bowl, combine remaining ingredients (except icing ingredients).
Step 4: Pour into dry ingredients and mix just until all ingredients are moist.
Step 5: Spoon batter in muffin tin, filling to rims. Bake 20-30 minutes, until light brown, and a cake tester inserted into center comes out clean.
Step 6: Cool in pan 10 minutes before removing to wire rack to cool completely.
Step 7: Combine all ingredients in a small bowl and beat on medium speed with electric mixture until creamy and smooth. Frost top of each cooled muffin.
