Maids of Honor
"I don't know where this originated, but the name not only sounds elegant, but tastes and looks elegant with the jam and white cake and yummy frosting. A friend made these for a bridal shower once and I have been making them ever since for special occasions. It calls for pie crust and I make my own, but you may buy one if you choose. I use a good Raspberry Jam (Smuckers). These are so pretty with the red jam, white cake, and fuffy frosting."

Step by Step Method
Step 1
Make the pie crust and roll out to cover a large cookie sheet making a 1" edge but don't stretch it out; just ease it in so it won't shrink.
Step 2
Prick holes all over the crust with a fork; bake at 400 degrees till golden and done; cool and then spread the jar of jam over the cooled crust.
Step 3
Mix the cake according to directions on box OR use the amounts above--don't use both; pour batter over the jam and bake at 350 degrees for time on box or till done when tested.
Step 4
FROSTING: Put everything into a mixing bowl starting with 2 cups sugar and adding more if needed; whip till light and fluffy and then frost your pan and enjoy.
