Ingredients

The ingredients are:
  • Crust:
  • 2 cups white flour
  • 3/4 cup Crisco
  • 1 teaspoon salt
  • 4 1/2 tablespoons cold water
  • Cake:
  • 1 (12-ounce) jar raspberry jam---this goes on top of the pie crust before the cake is poured in
  • 1 (18-ounce) package white cake mix (I use Duncan Hines)
  • 1 1/3 cups water
  • 1/3 cup vegetable oil
  • 3 large egg whites
  • Frosting:
  • 1/2 cup Crisco
  • 1/2 cup butter
  • 1/4 cup evaporated milk
  • 1 teaspoon vanilla
  • 2 1/2 cups confectioners sugar

How to Make

  • Step 1: Make the pie crust and roll out to cover a large cookie sheet making a 1" edge but don't stretch it out; just ease it in so it won't shrink.

  • Step 2: Prick holes all over the crust with a fork; bake at 400 degrees till golden and done; cool and then spread the jar of jam over the cooled crust.

  • Step 3: Mix the cake according to directions on box OR use the amounts above--don't use both; pour batter over the jam and bake at 350 degrees for time on box or till done when tested.

  • Step 4: FROSTING: Put everything into a mixing bowl starting with 2 cups sugar and adding more if needed; whip till light and fluffy and then frost your pan and enjoy.
